Located in Island Harbour, Anguilla, British West Indies and built on the beach, facing the Caribbean Sea, COTE MER is THE restaurant in Anguilla!
Welcome, dear food enthusiast, to our restaurant and thank you for choosing us tonight. For the ones who have not tracked our progress to date, this will be our third season running the operation from the beautiful fisherman’s village of Island Harbour.
Much in accord with the setting of the place, our intention is to create a pleasant, relaxed atmosphere where we can combine Caribbean elements with French culinary expertise. Your meal tonight will be prepared by the head honcho, Monsieur Alain Cabioch, from La Rochelle, France (near Bordeaux, if you don’t happen to have a GPS at hand) who, after traveling the world, resolved to make the Caribbean his home for life (cue le violin) We have been fortunate enough to have him as a resident in Anguilla for the past two years, during which he has shared his talent and knowledge with us at Cote Mer.
In this regard, his philosophy is ours not because anyone has imposed it but because we always shared it. Chez nous you will enjoy a feast that celebrates the unique flavor of each meat, each fish, each vegetable or fruit that we use. For that we take obsessive care in the quality and origin of our ingredients; for that too we spend hours considering which garnish will best enhance, not cover, the natural taste of our food.
